Description
Easy, delicious breakfast burritos, that can be adapted to add any ingredients you like! It’s so helpful to have some quick meals ready to go on a busy morning in the fridge or freezer. These freeze and thaw beautifully. They are yummy toasted in a sandwich press, for a delicious crunch.

- 12 eggs
- 1 onion, diced
- 1 red capsicum, diced
- 500 g pork mince
- 15 mini tortillas
- 3 cups shredded tasty cheese
- 3 Tbs olive oil
- 3 garlic cloves, crushed
- 300g jar of your favourite salsa
- Salt and Pepper, to taste
Instructions
- Add a little olive oil to a pan on medium heat.
- Add pork mince to pan and cook, then remove the mince from and set aside in a bowl, leaving remaining fat in the pan for flavour.
- Add garlic, diced onion and capsicum in frypan and cook. Set aside in a separate bowl.
- Crack all eggs into a bowl, season with salt and pepper and whisk until combined.
- Add some more oil to the frypan and pour in the egg mixture, keep stirring until cooked through and scrambled. Set aside in a separate bowl.
- Lay all wraps out on bench and spoon on eggs, mince, capsicum and onion mixture, cheese then salsa.
- Fold both sides of the wrap into the middle first, then top and bottom of the wrap, then flip it over so it stays together.
- At this stage either eat it fresh as is, toast it until hot under the grill, or pop in the sandwich press until crisp. If making these for later, place them in an airtight container in the fridge or into a large zip lock freezer bag and freeze. Yum!!!
Notes
- I used small tortillas, approximately 18cm (7″) in size
- This makes approximately 16 burritos
- To eat these from the freezer: Put a burrito on a plate and wrap paper towel around it, then microwave for 1 minute and 30 seconds, flip over then put on for another 30 seconds- 1 minute depending on your microwave.
- WARNING: They will be extremely hot. Leave to cool a little before eating.
- These can be kept up to 3 days in the fridge.
- Tip: Cool ingredients before putting burritos together.
