Description
A quick, easy and delicious meal that is made mostly of staples you will already have in your kitchen!
Ingredients

- 3 Chorizos, sliced (400g)
- 5 Cups cooked penne pasta (500g)
- 3 Cups shredded tasty cheese
- 1 x 400g tin diced tomatoes
- 1 Large onion
- 3 cloves garlic, crushed
- 1 red capsicum, diced
- A dash of thickened cream (can be omitted, I used about 2 Tbs)
- 1 tsp dried mixed herbs
- 1 tsp salt
- 1/4 tsp pepper, to taste
- 2 Tbs Olive oil
Instructions
- Preheat oven to 180 degrees Celsius (fan-forced).
- Cook pasta according to packet instructions and set aside.
- Turn frypan onto medium/high heat and add oil.
- Whilst frypan is heating up dice onion, capsicum, crushed garlic, then add to the pan, cook for 2 minutes
- Whilst that is cooking, slice the chorizos into thin slices then add to frypan and cook for 2 minutes
- Add diced tomatoes, cream, salt and pepper, and herbs and cook for a few minutes.
- Then add pasta and stir until incorporated.
- Add pasta mixture to an oiled baking dish, top with cheese and bake for 15 minutes or until cheese is golden.
Notes
- The cream can be omitted if desired
- If you’re short on time, you don’t need to bake this as it is already cooked, just sprinkle cheese on top and enjoy!!!
- This freezes and defrosts extremely well too.
