Chorizo Pasta Bake

Description

A quick, easy and delicious meal that is made mostly of staples you will already have in your kitchen!


Ingredients

Scale
  • 3 Chorizos, sliced (400g)
  • 5 Cups cooked penne pasta (500g)
  • 3 Cups shredded tasty cheese
  • 1 x 400g tin diced tomatoes
  • 1 Large onion
  • 3 cloves garlic, crushed
  • 1 red capsicum, diced
  • A dash of thickened cream (can be omitted, I used about 2 Tbs)
  • 1 tsp dried mixed herbs
  • 1 tsp salt
  • 1/4 tsp pepper, to taste
  • 2 Tbs Olive oil


Instructions

  1. Preheat oven to 180 degrees Celsius (fan-forced).
  2. Cook pasta according to packet instructions and set aside.
  3. Turn frypan onto medium/high heat and add oil.
  4. Whilst frypan is heating up dice onion, capsicum, crushed garlic, then add to the pan, cook for 2 minutes
  5. Whilst that is cooking, slice the chorizos into thin slices then add to frypan and cook for 2 minutes
  6. Add diced tomatoes, cream, salt and pepper, and herbs and cook for a few minutes.
  7. Then add pasta and stir until incorporated.
  8. Add pasta mixture to an oiled baking dish, top with cheese and bake for 15 minutes or until cheese is golden.

Notes

  • The cream can be omitted if desired
  • If you’re short on time, you don’t need to bake this as it is already cooked, just sprinkle cheese on top and enjoy!!!
  • This freezes and defrosts extremely well too.
