Crustless Quiche

Description

This is a quick and easy crustless quiche recipe that’s ridiculously tasty. It’s easy to whip together on a busy night and get it in the oven. Serve it with a simple fresh salad or some veggies and you’re good to go!


Ingredients

  • 1 carrot, grated
  • 1 medium zucchini, grated
  • 1 medium onion, diced
  • 250g bacon, diced
  • 2 garlic cloves, crushed
  • 1 tbs fresh parsley, chopped finely
  • 100g shredded tasty cheese
  • 300ml thickened cream
  • 5 eggs (600g medium-sized)

Instructions

  1. Preheat oven to 180 degrees Celcius (fan-forced).
  2. Prepare the quiche dish by using spray oil or a dash of olive oil and spreading it all over, using some paper towel.
  3. Grate the carrot and zucchini and place them on a paper towel to remove all the moisture you can. Then place them in a large mixing bowl.
  4. Dice the onion and bacon (if not pre-diced) and add them to the same mixing bowl.
  5. Crush the garlic and finely chop the parsley and add this to the bowl.
  6. Then add the shredded cheese, cream and eggs.
  7. Mix all together thoroughly until all combined.
  8. Pour into the prepared quiche dish, and place in preheated oven for 1 hour, or until cooked through.

Notes

  • All ovens can vary greatly. Check quiche at the 45-minute mark and add 5-10 minutes and check again, continuing until fully cooked through.
  • Make sure to remove the moisture out of the carrot and zucchini by squishing it with a paper towel. (This will help prevent a soggy quiche.)
