Freezer Breakfast Muffins

These freezer breakfast muffins are so quick and easy to pop in the microwave on a busy morning. They can be made in advance and put in the fridge on a plate covered with Glad Wrap.

Cooking a big batch of eggs this way in the oven makes it so much easier too. At this stage before cooking, they can be seasoned with salt and pepper if you like. You could also add a little shredded tasty cheese which is delish!

These freeze and defrost extremely well. I like to double this quantity to make a big batch of muffins and have plenty in the freezer to grab and go.

Freezer Breakfast Ingredients

These can be wrapped individually in glad wrap and put in a large zip lock bag in the freezer. They keep nice and fresh like this, for a quick breaky on the run. You can add tomato sauce, bbq sauce, relish or whatever your heart desires to flavour them up. Our favourite is bbq sauce!

Freezer Breakfast Muffins

Description

Easy, delicious bacon and egg freezer muffins for a quick breakfast for crazy busy mornings or simply when you want a yummy breakfast but don’t have time to cook something.


Ingredients

Scale
  • 1 Packet of English breakfast muffins (6)
  • 6 eggs
  • 6 bacon rashes
  • 6 slices of tasty cheese
  • salt and pepper to taste
  • barbecue sauce (if desired, its delicious)

Instructions

  1. Preheat oven to 180 degrees Celsius, fan forced.
  2. In a muffin pan, spray oil to coat surface and crack one egg into each muffin case, then pierce each yolk with a knife and swirl it around a little to disperse yolk.
  3. Place muffin pan into oven and cook eggs for 10-13 minutes (depending on your oven, I cook for 11 minutes. Under cook slightly as reheating later will cook a little more).
  4. In a frypan cook bacon over medium to high heat, turning occasionally for approximately 5 minutes, or until cooked through. Drain on paper towel.
  5. Once eggs are cooked take out of oven and pop out with a spatula onto a plate. Season with salt and pepper.
  6. Slice muffins in half.

Assembly: 

  1. Put all muffins cut side up on a cutting board.
  2. Place slices of cheese on bottom half of all muffins, then bacon, then egg.
  3. Add a good drizzle of barbecue sauce if desired, its delicious! 
  4. If getting out of the fridge, microwave for 1 minute and check it. This will depend on your microwave. It may need a little longer.
  5. If getting out of the freezer, unwrap the gladwrap and microwave for 1 minute on one side, then flip over and cook for another 30 seconds then check.

Notes

  • Cook eggs a little less than you think , when they are reheated they’ll cook a little more and you don’t want them dry.
