Egg and Bacon Pie

This recipe is absolutely delicious. Who doesn’t love bacon and eggs! I have been making this for years. Over time, it has been changed to make it even yummier and is a favourite in our house. It’s even better the next day!

I find I always have the ingredients on hand to make it in a pinch, and it is really quick and easy to make, which is a win in my books! We have used a 2-litre baking dish to cook this.

How to make Egg and Bacon Pie:

  • Simply grab two mixing bowls. In one bowl, add the first six ingredients and whisk together until incorporated.
  • In the second bowl add the remaining ingredients and mix together with a wooden spoon.
  • Then add the bowl of milk and egg mixture into the other bowl of ingredients and mix together with a wooden spoon until incorporated.
  • Pour into a greased baking dish and bake in a preheated oven of 180 degrees Celcius for an hour, or until cooked through. Check it at the 45-minute mark then put it back in the oven until cooked. Check by cutting it with a knife, and if the liquid is absorbed and the egg is puffy and hot it is ready.

This pie recipe freezes and defrosts really well. Doubling this recipe is helpful, and once cooled, pop half in the freezer for a weekday meal. It can be served with a simple salad and chips, or mash and veggies for a yummy dinner.

Description

This Egg and Bacon pie recipe is easy to make and so delicious. It is great served with a garden salad and garlic bread, or vegetables and chips. Enjoy!


Ingredients

  • 6 eggs                                                                           
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 c milk
  • 1/2 c plain flour
  • pepper, to taste
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 6 rashes of bacon, chopped (350g)
  • 3/4 c grated tasty cheese
  • 1/2 tsp dried parsley or 1 tsp fresh chopped parsley

Instructions

  1. Preheat oven to 180 degrees Celcius (fan forced)
  2. In a large mixing bowl, add the eggs, baking powder, salt, milk, flour and pepper and mix altogether with a whisk, until incorporated.
  3. In a separate mixing bowl add onion, garlic, bacon, cheese and parsley and mix together with a spoon.
  4. Pour ingredients together into the large mixing bowl and mix together with a spoon until incorporated.
  5. Oil a deep baking dish with spray oil and pour mixture into dish.
  6. Place into preheated oven and bake for one hour, or until cooked through and browned nicely on top.

Notes

  •  Check pie at 45 minutes and then keep checking, depending on your oven.
  •  A 2 litre baking dish has been used here.
