Sweet and savoury green beans and bacon with red capsicum, baked in an easy brown sugar and soy sauce. A simple side dish made with canned green beans and ready in 30 minutes.

Ingredients

  • 1 × 410 g can green beans, well drained (about 250 g drained)
  • 1/4 red capsicum (red bell pepper), thinly sliced
  • 3 slices bacon, rind removed and diced (about 150 g)
  • 1/4 cup brown sugar, loosely packed
  • 1 tablespoon butter, melted
  • 3 teaspoons soy sauce
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 180°C (350°F). Line a 20 × 20 cm (8 × 8-inch) baking dish with baking paper.
  2. Drain the green beans well and spread them evenly over the bottom of the lined baking dish.
  3. Scatter the thinly sliced red capsicum over the green beans, then add the diced raw bacon.
  4. Melt the butter in a small bowl for 20–30 seconds in the microwave, or melt gently on the stovetop. Add the brown sugar, soy sauce and garlic powder and stir until combined.
  5. Pour the brown sugar mixture over the green beans, capsicum and bacon. Gently stir everything together until evenly combined.
  6. Bake uncovered for 30 minutes. After 15 minutes, stir everything with a wooden spoon and spread it back into an even layer. Return to the oven and bake for the remaining 15 minutes. Serve hot.

Notes

Drain the green beans really well before adding them to the baking dish. Stir the beans halfway through the 30-minute cooking time, then spread everything back into an even layer before returning to the oven.
