Homemade Mini Pizzas

These homemade mini pizzas are so easy and versatile, that you can literally add anything your heart desires to them. There are so many combinations of yummy flavours you can make. Honestly, most things you have on hand in your crisper in the fridge could go on these.

Topping ideas for homemade mini pizzas:

  • Hawaiian– Tomato paste, shredded ham, pineapple pieces, shredded cheese.
  • Meat lovers– Barbecue sauce, salami, sliced cabanossi, shredded cheese.
  • Vegetarian– Tomato paste, chopped red capsicum, baby spinach, sliced mushrooms, pineapple pieces, shredded cheese.
  • Cheese pizza– Tomato paste, shredded cheese.
  • Supreme– Tomato paste, sausage, onion, mushroom, olives, capsicum, pepperoni and cheese.
  • Tomato paste, salami, shredded cheese.
  • Mozzarella cheese is delicious on these too instead of tasty cheese, it melts so nice.
  • Crushed garlic cloves add a beautiful depth of flavour and bite to them.
  • You can use either tomato paste or pizza sauce on your pizzas, both produce yummy pizzas.

Can these be frozen?

Yes! These pizzas can be frozen for up to three months, stored in a zip lock bag, with the air removed or in an airtight container. Homemade mini pizzas can be made on two lined baking trays, as pictured above.

The ingredients should be squished down firmly with either your hand or the back of a spatula, then placed in the freezer (BEFORE COOKING) for at least two hours to become firm. They can then be placed in a ziplock bag or airtight container, ready to cook as needed for a handy, ready-to-go meal!

These pizzas are so yummy and very convenient after having a baby, as they can be eaten one-handed whilst tending to a little one. Which I have found is a massive bonus, when in all honesty, sometimes you don’t have time to eat properly… or at all.

Can I reheat these?

Yes, if they have been already cooked and put in the fridge for later, they reheat really well in the microwave. Reheat for one to two minutes, checking in 30-second intervals.

Description

Easy, delicious homemade mini pizzas ready in no time! If made in advance, they can go straight from the freezer to the oven whenever you need a quick lunch or dinner on the table or the go.


Ingredients

Scale
  • 2 packets of plain English muffins (10 muffins)
  • 1 cup of tomato paste/pizza sauce
  • 2 cups of shredded tasty cheese
  • 150 g shredded ham
  • 1/4 red capsicum, chopped
  • 1/2 cup of washed, chopped baby spinach
  • 1/2 cup pineapple pieces

Instructions

  • Line two flat baking trays with baking paper.
  • Cut all the muffins in half and lay on trays cut side up.
  • Add a generous amount of tomato paste/ pizza sauce to all muffin halves.
  • Then add ham, capsicum, baby spinach, pineapple and cheese.
  • Flatten down toppings with the back of a spatula or anything flat to make the topping stick a little better to the base. 
  • Place into the freezer for at least for a few hours, until everything has frozen solid, then transfer gently to either a large container with baking paper separating layers if they are touching or gently put into a zip lock bag, making sure all the air is taken out then close and freeze. 

To cook: 

  • Preheat oven to 180 degrees Celsius, Fan Forced.
  • Place as many pizzas as needed onto a lined baking tray and cook for 10-12 minutes or until cheese is melted and everything is cooked to your liking. This will depend on your oven, as everyone is different. Enjoy!!! 

Notes

  • Be sure to flatten down toppings with a egg flip or anything flat to make sure the toppings will stay in place when transferred and frozen.
