This is the best potato bake recipe you will find! It is so easy to make, delicious and makes a lot! It’s great for bbq’s, and when served up, this dish is always the first to go as it’s just so yummy.
It’s great for lunch, dinner, and leftovers are soo good! Who can resist a great potato bake? This was made every weekend when we were growing up. We always had a BBQ with fried rice, rissoles and steak too yum!
It’s made with layers of thinly sliced potatoes, diced bacon, onion, cream, french onion soup and cheese.
All the best ingredients all put together in a delicious bake! It is truly great for any side dish needed. There will be no complaints, I promise!

This recipe has been adapted in the last couple of years to include french onion soup. I was reluctant to try adding it to be honest, as the original recipe I was used to devouring was delish as is.
So if you don’t have it on hand, don’t worry, you’re in good hands, and it will taste delish without it too.
BUT I had tried a few potato bakes at different places which had it added. So it was added as a trial and oh my gosh! It was so good.

Can potato bake be made in advance?
Yes, absolutely! You can make it up the day before, place foil over the top firmly and place it in the fridge.
Bake it the next day when you’re ready. Cook until potatoes are tender when tested with a fork.
Variations:
- You can skip the french onion soup if you don’t have it on hand or don’t like it, and it will be delicious.
- You can add parmesan cheese on top of tasty cheese for an added depth of flavour.
- Russet potatoes, Desiree potatoes and Yukon Gold potatoes work well for this recipe, but most potatoes you will find will produce a great potato bake.

An easy, delicious, creamy potato bake that will become a favourite in no time.
Ingredients
- 8–10 large potatoes (approximately 1kg)
- 1 large onion, diced
- 300g diced bacon
- 300ml thickened cream
- 4 cups shredded tasty cheese
- 1tbs sweet paprika
- 1 tbs oil
Instructions
- Preheat oven to 180 degrees Celcius.
- Peel potatoes then slice thinly, set aside.
- Dice onion and set aside.
- Pour cream into a medium-sized bowl and the french onion soup sachet, stir until combined.
- In a large baking dish pour the oil into the bottom and spread it around with a pastry brush.
- Place a layer of sliced potatoes in the bottom of the dish, then spread a handful of diced onion, then spread a good handful of diced bacon.
- With a spoon, pour a layer of cream coating the potatoes well.
- Continue layering like this to make three layers, or until everything is used up.
- Spread out all the cheese on top.
- Sprinkle the paprika over the top of the cheese evenly with either a spoon or use a shaker container.
- Place in oven and bake for approximately one hour, or until cooked through. Check it is cooked by piercing it with a fork or skewer and the potato is soft.
Notes
- Depending on how thick you cut your potatoes will then depend on how long it takes to cook.
- Every oven is different, so check potato bake at the 45-minute mark and continue to cook until done, it can take 1.5 hrs if thick slices.
- French onion soup can be left out if you do not have it, or do not like it.
