You’re going to absolutely love this crustless quiche recipe because it’s quick and simple to whip up and throw in the oven on a busy night.
All whilst you’re running around getting everything else sorted, dinner is cooking. It’s flavour packed and delicious the next day if you have any leftovers.

Can you make a quiche ahead and reheat it?
Yes, it can be cooked, left to cool, then covered with glad wrap then placed in the fridge until needed.
Then simply cut the portion needed and put it on a plate and reheat in the microwave until hot. Heat for 30 seconds to 1 minute and a half. (heating in 30-second bursts until the desired temperature).
If reheating from frozen, you can place some paper towel over the piece of quiche to absorb some of the moisture that will be there from the vegetables This is perfectly normal and fine.
How long does crustless quiche last?
It will last up to 3-4 days in the fridge with either glad wrap wrapped around the quiche dish or in an airtight container.
If needed to be stored for a longer period of time, it can be put in the freezer in airtight containers for up to 3 months.
Tips:
- Remove as much moisture out of the grated zucchini and carrot as you can. If you skip this step you’ll end up with a soggy quiche.
- To do this step: Grab a couple of pieces of paper towel and squeeze the grated veggies in the paper towel to remove a lot of the moisture. Then place in the bowl with other ingredients and mix until incorporated.
- It is cooked if it’s mostly set in the middle when jiggled in the dish. If it wobbles a good bit, put it back in the oven for another 10 mins and check again.
- You can always cut in the middle with a knife and see if the egg is cooked. It will have a little moisture in there, naturally from the veggies which are fine and delicious!

Description
This is a quick and easy crustless quiche recipe that’s ridiculously tasty. It’s easy to whip together on a busy night and get it in the oven. Serve it with a simple fresh salad or some veggies and you’re good to go!
Ingredients
- 1 carrot, grated
- 1 medium zucchini, grated
- 1 medium onion, diced
- 250g bacon, diced
- 2 garlic cloves, crushed
- 1 tbs fresh parsley, chopped finely
- 100g shredded tasty cheese
- 300ml thickened cream
- 5 eggs (600g medium-sized)
Instructions
- Preheat oven to 180 degrees Celcius (fan-forced).
- Prepare the quiche dish by using spray oil or a dash of olive oil and spreading it all over, using some paper towel.
- Grate the carrot and zucchini and place them on a paper towel to remove all the moisture you can. Then place them in a large mixing bowl.
- Dice the onion and bacon (if not pre-diced) and add them to the same mixing bowl.
- Crush the garlic and finely chop the parsley and add this to the bowl.
- Then add the shredded cheese, cream and eggs.
- Mix all together thoroughly until all combined.
- Pour into the prepared quiche dish, and place in preheated oven for 1 hour, or until cooked through.
Notes
- All ovens can vary greatly. Check quiche at the 45-minute mark and add 5-10 minutes and check again, continuing until fully cooked through.
- Make sure to remove the moisture out of the carrot and zucchini by squishing it with a paper towel. (This will help prevent a soggy quiche.)
