Banana Ice Cream

This banana ice cream is a one ingredient dessert. It has the texture of normal ice cream but doesn’t have dairy and is vegan friendly.

It’s great to be able to offer your family a delicious, healthy dessert, without having to worry about lactose intolerance, extra sugar or weight and it’s cheap!!

This “nice cream” as it’s often referred to is high in fibre and keeps you feeling fuller for longer. It is plenty sweet enough too, just using ripe bananas.

What is Banana Ice cream?

It is essentially “ice cream” made out of frozen bananas. Using ripe bananas that have just started to get slightly brown on the skin.

It is then blended in a blender, food processor or Thermomix until smooth and velvety.

It is similar to soft-serve ice cream and delicious. There is no churning involved, just blending and eating immediately or freezing for 30 minutes to firm up a little more, then enjoy.

Do I need a Thermomix to make this?

Absolutely not! This is what I have used and it turned out deliciously silky smooth. BUT you can definitely make this with a blender or food processor.

  • If using a blender, you may have to add a little liquid of your choice as it gets a bit thick. Continue blending until a smooth consistency.
  • If you’re using a food processor, you shouldn’t need any extra liquid, and just process until smooth.

How to make this recipe:

Firstly peel, then chop bananas into 2-3cm pieces and freeze in a zip lock bag, airtight container or parchment-lined baking tray for at least 3 hours or preferably overnight.

Once bananas are completely frozen, place them into the Thermomix bowl, with measuring cup in and

Chop 20 seconds/speed 8, then with a spatula (I use a silicone spatula, it’s so much easier) scrape down the sides and chop for 5 seconds/speed 8. It will then look similar to this:

If needed, mix for another 5 seconds/speed 8. Give it another quick hand mix with a spatula in the bowl, to incorporate it all, and it will be silky smooth. Similar to soft-serve ice cream like this:

Then it is ready to be eaten immediately as is. It can also be put into a container and popped into the freezer for half an hour, then serve in a bowl with an ice cream scoop. Eat as is, or serve it with whatever toppings you desire, yum!

Ice cream topping Ideas:

  • Chopped strawberries
  • Hot fudge
  • Choc chips
  • chopped nuts
  • Milo (yep, give it a try!)
  • Peanut butter
  • Nutella

Here we added 1 tablespoon of choc chips to the Thermomix bowl once banana ice cream was made, and mixed it for:

4 seconds/reverse/speed 3.

We topped our banana ice cream with more choc chips here (cos why not?), and it added a beautiful crunch and flavour that was delish!

How many bananas do I need?

In this recipe, we have used 3 frozen bananas, but honestly, use however many you’d like, depending on the size of your mixer, just don’t overload it.

Three bananas mixed into ice cream, easily serves two, if not three people, as it expands when it gets aerated.

Can this recipe be frozen?

Yes absolutely. With the leftover mixture, I actually lined a baking tray with baking paper and scooped out spoonfuls of banana ice cream onto it, and froze that overnight.

Then I placed the frozen spoonfuls of ice cream into a ziplock bag and placed that back into the freezer.

This is a perfect go-to healthy, snack for my little two-year-old, as one portion was the right amount for a snack. We all know how valuable snacks are ready to go! They are always hungry!

Is banana ice cream healthy?

Yes, it is. It is a great source of fibre, vitamin B6, vitamin C, potassium and magnesium. It also keeps you fuller for longer.

Plus using ripened bananas makes it nice and sweet, so no extra sugar or sweetener is needed.

  • 3 bananas

Instructions

  1. Line a baking tray with baking paper.
  2. Peel ripened bananas and slice into 2-3 cm pieces.
  3. Place on baking tray and place in the freezer for at least 3 hours, but preferably overnight.
  4. Place frozen banana pieces into the Thermomix bowl, and chop 20 seconds/speed 8.
  5. Scrape down sides and mix for another 5 seconds/speed 8. Repeat this step if needed.
  6. Serve immediately as is, or with desired toppings. Enjoy!

Notes

  • This can be placed into a container and frozen for about 30 minutes and scooped out using an ice cream scoop.
  • Alternatively, if there is any unused ice cream leftover, place spoonfuls of the mixture onto a lined baking tray and freeze overnight. Then place it into an airtight container or ziplock bag to be enjoyed whenever, it will only take a few minutes to thaw and will be delicious.
