Breakfast Burritos

Breakfast Burritos are a great way to eat a decent breakfast in the mornings, even if you’re short on time! Let’s face it, most of us are scrambling everything together to get the family out the door in the morning! Why not make the breakfast task a little easier on ourselves and enjoy it at the same time?

This recipe can have any ingredients swapped out for what you have on hand and like to eat. It is always handy to have some quick meals ready to go in the freezer and these freeze beautifully.

They are great served any time of the day. You could add a different protein if you like. Eg: Chicken mince, chicken or beef strips would be delicious.

What are breakfast burritos?

These traditionally consist of flour tortillas that are filled with different breakfast ingredients. Burritos can have any fillings you desire and can be changed up to put what each family member likes into it.

They can be eaten fresh as is or toasted in a sandwich press. They’re great to grab out of the fridge as a quick breakfast, lunch or dinner too. Here are some different burrito options to try down below!

Breakfast burrito variations:

  • Add cooked, chopped chorizo sausage
  • Avocado
  • Diced tomatoes
  • Chicken or beef strips, seasoned with garlic, onion powder and salt and pepper
  • Sauteed or roasted vegetables
  • Add your favourite salsa, baby spinach and sauteed mushrooms
  • Beans
  • Refried beans
  • Corn
  • Taco sauce
  • Hash browns, chopped
  • Scrambled eggs
  • Shredded cheese
  • Potatoes
  • Spinach
  • Potato gems (tater tots)

Ok, I got carried away… but as you can see, you can add just about anything you want in these and give them a go. They can easily be changed up and made vegetarian, loaded with veggies.

You can add any flavours you like. Change it up to what you like and have on hand, it’s very versatile. This tastes so good toasted in a sandwich press, to give it that delicious crunch, yum!

How long do breakfast burritos last?

  • FRIDGE: They will last up to 3 days in the fridge. It’s best to keep them in an airtight container, or on a plate covered with glad wrap and stored in the fridge. This will keep them as fresh as possible.
  • FREEZER: If you’re wanting to store them in the freezer, wrap each burrito individually in either glad wrap or foil and then place them in an airtight container or into a large zip lock bag, remove the air, then place in the freezer for up to 3 months.

How do you reheat frozen burritos?

You can either take them out of the freezer overnight if you have time, then heat them up in the microwave until hot or cook in a sandwich press until hot and crispy the next day.

If you’re short on time, get the quantity needed out of the freezer, put it on a plate and wrap a couple of pieces of paper towel all around the burrito. (This will help with any moisture and also helping the tortilla to not go hard when heating).

Then place in the microwave for 1 minute and 30 seconds, flip over and microwave again for 30 seconds to a minute, until nice and hot.

Note: This time needed is for one burrito, so if you’re heating more than one, more time will be needed to thaw a larger quantity. Also, every microwave is different and some are more powerful than others. You may need more time to thaw out burritos, heat until piping hot, then allow to cool a little before eating.

How to wrap a burrito:

  1. Warm wraps in the microwave first, until soft and flexible. Approximately 30 seconds.
  2. Add desired fillings to the middle of the wrap, leaving a bit of room at the top and bottom to wrap.
  3. Start by folding the two sides into the middle, firmly.
  4. Then grab the top and bottom of the wrap and pull towards the middle firmly, then flip over so it won’t fall apart.
  5. Then if storing in the fridge, place the folded side down, and cover with glad wrap, then heat as needed.
  6. If freezing, wrap tightly in either glad wrap or foil, then place in an airtight container or zip lock bag and freeze. They hold their shape a lot better like this and stay together when heating in the microwave or toasting them.

TIP:

  • Less is more! If there’s too much filling in your burritos it will make it too hard to wrap them, they will split apart and also it’ll be too hard to hold with the contents falling everywhere when you’re trying to eat them.
  • You can use any size flour tortilla you like.

Description

Easy, delicious breakfast burritos, that can be adapted to add any ingredients you like! It’s so helpful to have some quick meals ready to go on a busy morning in the fridge or freezer. These freeze and thaw beautifully. They are yummy toasted in a sandwich press, for a delicious crunch.


Ingredients

  • 12 eggs
  • 1 onion, diced
  • 1 red capsicum, diced
  • 500 g pork mince
  • 15 mini tortillas 
  • 3 cups shredded tasty cheese
  • 3 Tbs olive oil
  • 3 garlic cloves, crushed
  • 300g jar of your favourite salsa
  • Salt and Pepper, to taste

Instructions

  1. Add a little olive oil to a pan on medium heat.
  2. Add pork mince to pan and cook, then remove the mince from and set aside in a bowl, leaving remaining fat in the pan for flavour.
  3. Add garlic, diced onion and capsicum in frypan and cook. Set aside in a separate bowl.
  4. Crack all eggs into a bowl, season with salt and pepper and whisk until combined.
  5. Add some more oil to the frypan and pour in the egg mixture, keep stirring until cooked through and scrambled. Set aside in a separate bowl. 
  6. Lay all wraps out on bench and spoon on eggs, mince, capsicum and onion mixture, cheese then salsa.
  7. Fold both sides of the wrap into the middle first, then top and bottom of the wrap, then flip it over so it stays together.
  8. At this stage either eat it fresh as is, toast it until hot under the grill, or pop in the sandwich press until crisp. If making these for later, place them in an airtight container in the fridge or into a large zip lock freezer bag and freeze. Yum!!!

Notes

  • I used small tortillas, approximately 18cm (7″) in size
  • This makes approximately 16 burritos
  • To eat these from the freezer: Put a burrito on a plate and wrap paper towel around it, then microwave for 1 minute and 30 seconds, flip over then put on for another 30 seconds- 1 minute depending on your microwave.
  • WARNING: They will be extremely hot. Leave to cool a little before eating.
  • These can be kept up to 3 days in the fridge.
  • Tip: Cool ingredients before putting burritos together.
