This recipe is a delicious, easy pasta bake. It has chorizo sausage, which is made of ground pork, spices and seasonings. It is full of flavour.
This is cooked on the stovetop and transferred to a baking dish. Then topped with a generous amount of shredded cheese and baked until the cheese is delicious and melted. Yum!
You could definitely add some more vegetables to this dish, some diced zucchini, mushrooms or grated carrot would be delicious. Alternatively, you could also add some heat. Try adding some chilli in there, if that’s your thing, spice it up a bit.
This serves 8 people if served with a side of salad, so it’s great if you’re cooking for a few people and need a nice and easy, hearty feast. It’s flavour packed, and you will be back for more!
This pasta bake is best served in a bowl with a piece of garlic bread, or you could serve it with roast vegetables or a simple salad.

Description
A quick, easy and delicious meal that is made mostly of staples you will already have in your kitchen!
Ingredients
- 3 Chorizos, sliced (400g)
- 5 Cups cooked penne pasta (500g)
- 3 Cups shredded tasty cheese
- 1 x 400g tin diced tomatoes
- 1 Large onion
- 3 cloves garlic, crushed
- 1 red capsicum, diced
- A dash of thickened cream (can be omitted, I used about 2 Tbs)
- 1 tsp dried mixed herbs
- 1 tsp salt
- 1/4 tsp pepper, to taste
- 2 Tbs Olive oil
Instructions
- Preheat oven to 180 degrees Celsius (fan-forced).
- Cook pasta according to packet instructions and set aside.
- Turn frypan onto medium/high heat and add oil.
- Whilst frypan is heating up dice onion, capsicum, crushed garlic, then add to the pan, cook for 2 minutes
- Whilst that is cooking, slice the chorizos into thin slices then add to frypan and cook for 2 minutes
- Add diced tomatoes, cream, salt and pepper, and herbs and cook for a few minutes.
- Then add pasta and stir until incorporated.
- Add pasta mixture to an oiled baking dish, top with cheese and bake for 15 minutes or until cheese is golden.
Notes
- The cream can be omitted if desired
- If you’re short on time, you don’t need to bake this as it is already cooked, just sprinkle cheese on top and enjoy!!!
- This freezes and defrosts extremely well too.
