Watermelon Icy poles

Icy poles are such a great snack to have on hand in the freezer. In the heat of summer they’re great to grab one and cool down. A lot of the time store bought ones are full of sugar and colours, so this is a nice healthy alternative that tastes great and the kids are going to love, delish!

This is a great and easy Watermelon Icy pole recipe to cut out those nasties. It takes minutes to make and pop in the freezer. It’s a great way to use up all that watermelon too!

I have used a Thermomix here to blend the watermelon up, but you absolutely could use a food processor. Just blend until smooth. I have removed all the black seeds before blending and just removed a few of the white seeds for images, but you could use a strainer or a nut milk bag if you prefer.

Then just pour into your favourite icy pole molds, place the sticks/handles in there, then freeze. Easy!!!

Description

This is an easy watermelon icy pole recipe that tastes great. It’s great to use up the extra watermelon in your fridge. Also, it is just fruit so no added sugars and colours. This recipe has been blended up using a Thermomix, but you definitely could use a food processor and it will have the exact same result.


Ingredients

  • 500g watermelon

Instructions

  1. Cut a piece of watermelon into cubes, roughly 2cm x 2cm.
  2. Remove any black or white seeds with a spoon.
  3. If using a Thermomix: Place in Thermomix bowl and blend 10 seconds/speed 5, lid on.
  4. If using a food processor/blender: Place in the food processor bowl or blender and blend until smooth and pureed.
  5. Here this has not been strained which is a lovely texture, but you can strain through a sieve, if preferred.
  6. Pour into Icy Pole moulds, then place the sticks/handles into liquid.
  7. Freeze for at least 4 hours

Notes

  • You may have to run Icy Pole mould under warm water for a few seconds to release Icy Pole.
  • This is plenty sweet enough with the natural sugars from the fruit, BUT if your keen on adding a little more sweetness to it, you can add:
  • 1 tbs icing sugar, or 1 tbs maple syrup, or 1 tbs honey. Have a try of the plain watermelon one and go from there. Delish!
